
Abstract: A text for students in nursing and allied health fields provides basic information related to normal and therapeutic nutrition for patient care. The 20 text chapters are grouped among 3 general areas. The first discusses the nutrients according to definitions and occurrences in foods, terminology, essentiality, daily requirements, deficiency and toxicity symptoms, relationship to health, and their intake, digestion, absorption, and metabolism. The second area deals with undernutrition in the US and throughout the world and traces nutrition through the life cycle. The third area is devoted entirely to the nutrition and dietary care of patients with clinical disorders and specific diseases, including their causes, symptoms, diagnoses, medical management, and nutritional and dietary care. Extensive tables and illustrations are provided throughout the text, and copious reference data and a glossary are appended.
