
Growing out of a 1995 workshop organized by the World Health Organization and the Food and Agriculture Organization, European scientists offer 12 studies that assess fermentation as a household technology for improving food safety. They focus on critical points in the fermentation process to ensure the safety of the resulting products in line with the Hazard Analysis and Critical Control Point (HACCP) System. Rather than taking particular processes or products one by one, they consider various hazards.
