The popularity of freezing is probably due to the fact that this easily learned process can be applied to uncooked, partially cooked and already prepared foods. Freezers are often misused which causes a waste of energy. Guidelines are given for proper freezing techniques; and equipment, packaging materials, costs and techniques are discussed.
